Summer fruit salad with fresh mint dressing

Peach, blueberry salad with vegetables, feta cheese and pecan nuts. Healthy summer food.serves 4

What you’ll need:

Instructions:

  1. Whisk together mint, lime zest, lime juice, sugar and salt in a small bowl. Whisk in oil; set aside
  2. Combine blueberries, peach and cantaloupe in a large bowl and gently toss with dressing. Refrigerator for 30 minutes.
  3. To serve, place lettuce in a large bowl, top with marinated fruit and dressing, and gently toss to combine. Serve immediately.
